I want to know what is the Shortcut Key to Merge Cells in:
1. MS EXCEL.
2. OPEN OFFICE SPREADSHEET.
If there is not then please explain step by step can i assign a key.
OR if you have some shortcut keys table then please share

In excel 2007 you can do the following instead:
Right click merge and center in home tab and select add to quick access toolbar. A merge icon will go to right of the ribbon. Press Alt to see the corresponding number. (i.e. If it’s four alt + 4 should merge and center)
